    Black eyed peas with ham hocks!!!

    Love me some dirt peas. I have a crockpot on now full of black eyed peas and ham hocks.

    2 cups dried black eyed peas hydrated overnight
    6 cups water
    2 ham hocks (1.5 lbs total-ish)
    a quartered onion
    Garlic cloves
    thyme
    Bay leaves
    fresh cracked black pepper
    Salt

    Put in crock pot on high for 4 hours or so. At the end, pull the hocks and debone/fat. Add meat back to the peas.

    Have rice, collard greens, and pan cornbread ready for when it's done! Mmmmmm......

    I like to have some fresh sliced onions and pickled jalapenos on the side.

    That is a terrible thing to describe in an old Southern boy in the Pac NW. I think we have a bag of those dried peas around here somewhere.

    Just pulled the hocks out, deboned them, chopped, and added back in. I'm going to have a small bowl tonight, some with breakfast, and then eat them over rice for lunch.

    Skins and fat went to the boxer.

    Here it is in all of it's glory. Some people like to pour the peas over rice. I like to throw a big scoop of rice on top of my peas. This dish is cheap, hearty, and quite delicious. I have a big crockpot full that'll feed the family for 2 days. Important things to keep in mind:

    A) Use smoked ham hocks
    B) Do not use diced ham...
    C) Add whatever else you want to your taste.

    When I was a young lad my folks used to get "Government Surplus" Guess we were poor or something? Anyway The quantity of Black Eyed peas they sent was enough to feed an army. Guess my mom didn't know much about them and would trade them to the neighbor for fresh vegetables from their large garden. Then when we moved away to a far far worse place to live she didn't know what to do with them but by now my Culinary interested started to show so I said to her let's just boil them up an see how they taste! From that time fourth we aways used every bit we got! They do have a subtile but unique flavor In stews and with gravies are my favorite ways

    I'm down in the gnat line. Love me some collards, mustard, and turnip greens. They are an all day cooking item though and I like to cook them on the stove top.

    Beans, beans........oh, well, never mind.

    I have made a crock pot full the last 2 Sundays. Last week, I bought and braised beef shanks for the first time, and used the leftovers the next day in a pot of white beans.

    Today it was 15 bean soup mix, because it was the oldest in the pantry. I did use ham hocks today! Wonderful.

    When I am to lazy to break down the hocks, I use the Bryan smoked pork chops.

    Beans, peas, lentils, whatever, I always make Jalapeño corn bread, cut a block of cheese in to 3/4" square strips, and have a bottle of the pepper sauce with the little yellow peppers on hand.

    THAT'S IT. Cant take it anymore. Heading to the store for some collard greens and smoked ham hocks. If I gain weight its y'alls fault. Thanks fellas.
