    Pickled Eggs & Sausage

    A little different style of pickled eggs with sausage.
    Ingredients:
    Three packages, Sausages ( Smokie brand from Oscar Meyer)
    Two dozen eggs, Scrambled in shell
    One 16oz jar sliced hot cherry peppers
    One large onion sliced, and broken into rings
    One TBS pickling spice
    One TBS minced garlic
    One TBS salt
    In gal sterilized jar put in peeled eggs and sausage cut into 1 in pieces, alternating layers till jar is 3/4 full.
    Add jar of sliced cherry peppers with juice, pickling spice & minced garlic and onion rings.
    add any eggs left over and fill with white vinegar. seal and put on shelf to cure.
    After two weeks open a beer and enjoy your sausage & eggs.

    OK--- lets see now. Take a double helping of this, wait a hour or two then take a stroll down to the local super market and sashshay up and down the meat isle a time or two then stand off to the side and see what happens. yup, that ought to do it !!!!!!

    You don't have to scramble the eggs, just hard boil them. The scrambling just adds a little color. When I went to
    high school we had a boys food class as well as shop classes. In all the cook offs against the girls , the boys won.
    That little old lady taught them well. I was lucky my mother taught my brothers and me how to cook, bake and put up
    canned food. Not hard just get a cook book and follow directions. Now my wife does it most of the time. Benny, any of the
    precooked sausages will work for pickling, as long as they are natural casings.

    We use Vienna sausage once in a while, but mostly Lil Smokies.
    Polish dogs work very well.
