I have a 100 watt heater with a light dimmer also. I 100 watt is overkill but won't hurt a thing. I paid less than $5 shipped for it on ebay. I got the 100 watt because it was harder to find anything less expensive as cheap. For my needs the dimmer switch works just fine. Used a 3/4 inch piece of aluminum cut to fit the base of the press.

I set up a heater (100w cartridge type, eBay, 6 bucks or so) with an electric water heater thermostat from Lowe's. Under 20 dollars and the temperature calibration was accurate right out of the bag.
