    I was born and grew up in Wisconsin. SO, it is not an official chili place. BUT we ate a lot of chili that my mother made. I made it the same way as her only hotter. While living in Boston MA I made a big pot for an occasion at my place. ALL of the guys looked at me with a puzzled look. Every one of them agreed, "That's not Chili ...that is ...maybe chili soup?
    Make it with macaroni and beans.
    They ate and said BEST chili soup they ever had lol.
    As far as Chili in Texas with no beans......As I recall there ain't a decent cook in that state.

    My mother made it with raisins once. You could not tell they weren't beans until you bit into those mushy globs of goodness (not). She said it made since at the time because she was in a hurry and had no beans. But beans are necessary to make good chili.

    kidney beans, dark kidney beans and black beans plus a couple of ears of fresh corn cut off the cobb. Maybe that's why I always wind up with three gallons at the time. Plus a big sweet onion diced and a couple of finely diced jalepenos. No beans are acceptable only when chili is made specifically for hot dogs, which of course must also have fresh slaw and cheese.

    In most Texas chili contests you can't have anything solid or identifiable other than meat in the chili. Beans in the chili are an immediate disqualification. Pieces of garlic, onion, peppers, tomato or anything else will also get you disqualified. Beans are welcome and encouraged as a side dish; just not in the chili. Contestants often use powdered seasonings like onion, cayenne, garlic and chili powder to eliminate identifiable solids.

    Well all of this chili talk got my taste buds leaking so I scratch made a big pot of Posole Rojo. I spent a couple hours making the enchilada sauce yesterday, roasting the guajillos, pasillas, and anchos. Used home made chicken stock to reconstitute the peppers. Today, the pork cubes got browned but good in bacon grease and everything ended up in the slow cooker for 6 hours. I only wish I'd had some cabbage and radishes for garnish. Settled for garden fresh cilantro and diced avocado on top. Oh, and I'm from Wisconsin. I also make Chili Colorado, and Chili Verde from time to time. Chili with beans, sure, sometimes, chili without, using chunk meat, sure, sometimes.

    I know this is all in good fun , but I’ve never understood the bean no bean debate. If you like beans, throw’m in! If not leave them out! I do love me some chili! Making me want to cook up a pot. My wife says it’s a hundred out, I said perfect weather for chili. I’m kinda like the old Wolf brand chili commercial, ‘How longs it been since you had a big thick steamy bowl of Wolf brand chili’ ! ‘Well that’s to long’ !!

    Yes to beans, but no to cumin. My wife makes a great chili with beans, but as neither of us especially likes the taste of cumin, we omit it. I often make a nice cornbread to go with it.

    Part of the experience of eating chili is the "After Effect" and you ain't gonna get that with no beans! I have 5 to 6 times more beans by volume than meat in mine but the meat is always venison. That is one place where venison tops beef for sure. We eat huge volumes of chili at my house every year.
