Santa Brought Venison Summer Sausage - Recipe Or Serving Suggestions?

How do you like to use summer sausage other than just eating it with cheese on a cracker? Do you cook with it or use it in any recipes?
Got a .22 .30 .32 .357 .38 .40 .41 .44 .45 .480 or .500 S&W cylinder that needs throats honed? 9mm, 10mm/40S&W, 45 ACP pistol barrel that won't "plunk" your handloads? 480 Ruger or 475 Linebaugh cylinder that needs the "step" reamed to 6° 30min chamfer? Dice it up and put in scrambled eggs. Also Heinz horseradish sauce and mustard on rye and slice sausage for sandwich.

Slice a slab, fry it up, put it on buttered bread with lots of spicy brown mustard...

Sometimes just slice up and as Mary said fry it a little and eat it along side fried eggs and maybe a little grits with butter and salt and pepper. Another thing my wife does now and then is slice it and dice it up and put it on salad instead of ham. Goes good sliced thin on pizza too.

yup sliced up its great fried with breakfast. I like it too sliced up on a sandwich. Even a grill cheese with it sliced thing on it using rye swirl bread is great.. It does have kind of a ham taste when fried. When I make home made mac and cheese I throw some bacon and some summer sausage in it.

I have tossed it into my Bisquick egg pie too(recipe is on Bisquick site, I never measure and just eyeball it, like a runny pancake batter) after browning it to get some of the fat out. Use it in place of or with bacon.
