    I do believe I will make some tonight, to go with fried chicken and mashed potatoes. Can't beat that southern cuisine!

    Blackwater, I'm with ya on the diabetic backsliding with biscuits. I can avoid it only so long. I was raised with catheads and gravy at least once a day, and it's impossible to forget the joy it brings.
    Alas I too have to restrict my childhood pleasures.

    For a really good description of what the Army of the Potomac ate check out "HardtacK and Coffee" by John D. Billing. Available as an e book for less than $2 from Amazon. Very detailed look at a soldiers life.

    Good point, Thumbcocker. Along with eggs, I think they're two of "nature's most perfect foods," and if they're not, PLEASE don't tell me about it will ya'?

    The thing that's always intrigued me, especially in the days before I learned to cook, is how you can give 10 different people the exact same amount and materials, and each one will come out with very distinctive tasting biscuits. I know a little of the reasons, but know enough to know there are many more I do NOT understand. There's an old lady who loves to cook one county over from me, and you can't find them usually, but every day, she makes several fresh batches of home made biscuits, and sells them locally. They are a fine version of Heaven on earth, and that's why you can't find them. Enough people know about them that, when they see some on the shelves, they disappear quicker than they can be produced. Her recipe is a "secret," and she says she'll take it to her grave, but whatever her "secret" is, I suspect it's more in the timing and technique than it is in the ingredients.

    Making good biscuits is a real skill, and a very highly variable and sensitive one, and it's the "little things" that make all the difference in texture, taste, flakiness, and that "Aaaahhhhh" factor that the really great ones have. I'd just learned to make passable biscuits when I was diagnosed diabetic, and I think the first thing that I used my tester to establish how much it'd spike my blood sugar was biscuits. Now THAT will get a feller's lips pooched WAY out! But life's tough, and sometimes we old dogs have to learn a new trick or two, like it or not. But some I'll NEVER be able to abandon completely! Biscuits are probably at the top of the list. What else would a good ol' southern country boy put there?

    I also am diabetic and have cut my biscuit consumption to eating them twice a week. Lordy, do I ever look forward to those days! I will not cut them out entirely, I am not that afraid of dying.

    Blackwater, I was thinking about making some with fried pork chops tonight and then you had to throw the diabetic thing out. Now it's baked pork chops, no mashed taters, no pokchop gravy and no biscuits, Just veges and plain ice tea.

    These sound great. Going to make some. Lately I've limited my gluten (flour) for health reasons and it has made a wonderful difference. I'm not a purest, but these biscuits sound like a must try.

    That's the problem with going to doctors... They tell you things that you don't want to know...

    I'm not really a breakfast person, so about the only time I eat biscuits is the ones from Popeye's with their fried chicken. I tried this recipe though and it was good. Good enough that I bookmarked the page...

    Sorry, Minerat, but just to make amends, I give you full permission to enjoy at least one. How's that for bein' a real pal?

    Seriously, when I got diagnosed, my GP, who's a diabetic specialist, told me that everyone's endocrine system is different, and every diabetic is affected a little differently, and that sometimes, what one diabetic can't tolerate, another may well be able to eat, and the only way to really KNOW is to use my tester often before and after the meals. I try to test 1-2 hrs. after eating, and not any spikes in BS, and how much and how quickly they seem to spike. Some things have been very surprising.

    For instance, if I eat a Snickers bar when I'm fishing, I maintain a higher energy level, which is really appreciated, and still not spike my BS too high. Why that is I don't know, and my doc has said he doesn't either, so your guess is as good as mine. I now eat Snickers ONLY when I'm hunting or fishing and need the energy. I guess I kind'a use it like the final barrels on a 4-barrel carburetor, if you remember those old fashioned antiques.

    So allow yourself a once a month "special treat," but just don't go overboard with it and hurt yourself. It takes too long to recover from overdoing it, and that makes it less fun than an occasional treat. I honestly believe that allowing myself an occasional treat makes it easier to stay on track with my diet than if I were on a really strict and too highly regimented diet. But I also only take a pill once a day, and am not on insulin, so that has to be taken into consideration, too. It's different with everybody, and FWIW, I've found that the key to sticking to a diet can often be spices. Use them, and it's a lot easier to back away from the table feeling sufficiently satisfied, and I've found that simply feeling satisfied is the key. Find that point, and you can deal with the diabetes much more effectively. FWIW???

    Guys, controlling carbs is only half the battle. As Blackwater intimated, exercise is the other half. I have a friend who is type 1, takes his blood sugar often. His business is cleaning pools. He tells me he can drop his blood sugar 20 points by cleaning a pool. If you are willing to work hard you can afford more carbs and can still control the blood sugar. I'm type 2 and controlling with diet and exercise for the past six years.
