Now that looks tasty... to hot here for stews though. Fall is coming and that is usually one of my first fall meals though, or a pot of soup.
We used to make our "Red Rabbit." Fry up a big "cane cutter" (swamp rabbit, about 3-4 lb) and then make a brown roux. Put the rabbit and roux in a pressure cooker with about a cup and a half of onions, bell pepper, and celery (Cajun mirapoix) , pint of diced canned tomatoes and enough water to cover it all. Cook it at 15 lb for about 15 minutes and serve over a bed of rice. Mushrooms sound like a good addition! I've often thought about raising rabbits, but my family would have a cat at the thought of slaughtering and eating them. Tried it before, and got nothing but grief! Oh well.
