    Skinning and gutting rabbits - my way

    Got me 28 rabbits over the weekend so I thought to make a short tube video on how I skin and gut them.

    Warning, gory and bloody video.

    I just deep fry them after batter them like KFC chickens.

    The landlord particularly requested the liver and the kidneys to be left in the rabbit, so I did that.
    Often, I was asked to remove and collect the brain of chest shot rabbits as well.. #yuck#

    Usually for myself, I clean everything. I do not have particular fondness of the innards of a rabbit
    and since they are plentiful, I cannot be bothered to save the little bits.

    I have brushed them with olive oil and herbs and baked the pieces. The forelegs come out about 10 minutes before the rest is done. 350 F for 30-40 minutes.

    If you want to make a tasty treat, bone the meat, mix with some pork fat, season and grind into sausages. Put 32 up one day like that. Of course it helped that I worked in a meat market of a small grocery store at the time. They had a commercial grinder and stuffer.

    This is a process that I was just thinking about & discussing with a friend. We have numerous rabbits hopping through our yards and I considered snaring them (more of an urban environment) . However, I cannot waste if I catch/kill so thank you very much for your straight forward informative tutorial. I appreciate it.

    We do ours out in the field. We stop by a stream before we head back. We also ALWAYS wear gloves to clean them. You ever find any tapeworms? I hate them things. We hunt with 4 Beagles. I love it. 410 shotgun only for us. We try for head shots only close up. I love listening to the dogs.

    I cut the skin across the back to remove the skin like you showed. I also cut the lower legs off, but then I carefully separate the lower leg bone from the top leg bone at the joint so there are no broken bones remaining. Broken rabbit bones spilnter while cooking and get into the stew which takes away from the enjoyment of the meal.

    Your method is much like the way my father taught me long ago except we didn't use a knife to open the hide? Rabbit skin is very easy to tear. Pocket knife was used to open the stomach cavity. My father like them clean while still in the field. Back then we checked the liver closely for white spots, rabbit fever was a problem then, if I could of spelled Tularoma would of said that
