    squirrel

    Got a few squirrels today. What are your favorite recipes for em?

    Clean them up good, then soak the pieces in buttermilk for a hour or so, then I flour them with Kentucky Colonel seasoned flour and fry them up in a cast iorn skillet like I would chicken. Pour off most the oil when your done and make gravey with the brown bits left in the skillet to serve with biskets and the squirrel.

    We do as above but first cook up some bacon and fry the critters in the bacon fat..

    Depends on the age of the squirrels. Young ones are more tender and get fried, you got some good info above on that. The older sqirrels are boiled. An easy way is to put them in a crock pot all day. Pick out the bones and either make squirrel dumplings or add barbacue sauce. It's hard to go back to pulled pork after squirrel BBQ!

    My favorite
    2 squirrels, pieced
    ¼ c olive oil
    ½ t black pepper
    1/3 c lemon juice
    ½ t sugar
    ¼ t prepared mustard
    ¼ t salt
    ¼ t celery salt
    ¼ t garlic powder

    Season meat with salt and pepper. Heat the olive oil and brown the meat.
    Remove the meat and drain the skillet.
    Combine the other ingredients; mix well.
    Put the meat back in the skillet and top with mixture.
    Cover and simmer for 45 minutes. Don't let it dry out- might have to add some water.

    Like Overkill, young squirrels get fried. the older ones get made into squirrel & dumplings. I never tried them in BBQ sauce.

    Flour and brown the squirrels. Then put them in a large roaster with 3 or 4 sliced up potatoes,garlic,some onions,green beans,corn or whatever vegetable you like. Add 1 can of mushroom soup and water. Put the lid on it and throw it in the oven for an hour at 350 degrees.

    Poach/boil squirrel until tender. Debone and shred. Use meat to make squirrel potpie. YUM! This works especially well with older tougher critters of any kind.
