No comment on the aging question but can say that an Alaskan/Yukon moose hindquarter (130+lbs) with the bone in will freeze solid as a rock with no "sour" in the center. Winter hunts in these parts...

I'm looking at setting up to cast for the 10mm. Primary uses will be plinking (can we apply that term to the 10?) and the active discouragement of 4-legged carnivores. I'm thinking in the 185 to 200...
