Some brands of molds use a set screw to hold the sprue plate bolt where ya want it. That should work.
Also put a 'wavey washer' under the head of it too for tension. Its a odd item, but most hardware stores have them
Being an Alum. mold, I'd resist the urge to ding the bolt's threads in the middle somewhere to put some resistance on them.

I hate beating on the spruce plate and gloves can hurt me too.
I’ve come to the point where I have trouble opening the jars my wife must of had slightly loosened and now just mostly stab a hole in the top.
I will make something similar and go forth and cleanly shear off the sprues.
