I prefer to make my own hash.
Cook in oil, maybe 1/4 cup
5 medium potatoes diced
1 good sized onion diced
parsley to taste
salt and pepper to taste
when this is cooked
add a can of corned beef
cook until blended well
cornbread to go with it
1 cup yellow meal
3/4 cup flour
1/8 cup sugar, can omit
mix with fork
milk enough to make a thick batter
mix
1/8 cup melted bacon grease, added last, stirred well
pour into a cast iron skillet greased with bacon grease
back on 425 until edges a crispy and top is golden brown

I take what ever corned beef is left from having a slab for dinner and mix it in equal portions with what ever potatoes and vegs are left over in zip lock bags and freeze them. Then when I want corned beef hash for bfast, I put a bag in the reefer to defrost overnight and the next morning break it up and fry it up with onions red and green peppers and drop some poached or fryer eggs over it.

When I say a slab of corned,beef, I am talking about a 4-5 lb of corned beef you cook in a crock pot for 8 hrs on low and it is fork tender when done. Hard to cut slices as it is so tender it falls apart. I like it from the can too, but being the only one in the house who grew up on New England boiled corned beef and cabbage and like it, I have a lot of frozen leftovers in the freezer.

I run leftover corned beef through a coarse grinder plate then freeze that is serving size portions. If I have a leftover baked/roasted/boiled I cube it small dice(1/4 inch) along with grated onion and fry in bacon fat until it starts to crisp then ad the already cooked meat and left it fry more until nice and crispy. I season the potatoes with a shake of my house seasoning(salt/onion powder/garlic powder in equal amounts, black pepper to taste, half sharp paprika to taste). Serve with 2 eggs over easy on top so the yolk can run down through the hash. Biscuits on the side with lots of butter.
Love the stuff, by itself or with over medium eggs and sourdough toast slathered with butter. Haven't tried making any from scratch yet but Bazoo's recipe looks dang good.

Love the stuff........Wife makes it too with leftover roast but it's not like the canned stuff.

Canned is good, as long as you crisp it up. A couple of hatch chilies , and some runny eggs.

Pan fried in bacon grease, eggs, and old bay. Topped off with a little hot sauce. The kids and grandkids destroy it in no time.
I've got one of the newfangled electric pressure cookers, and when available I'll buy several corned beefs at Costco. I'll cook up one in the pressure cooker at 15.0 psi for 65 min. and make corned beef and cabbage. Then the meat that's left over goes into the fridge for a couple of days, then gets chopped into cubes and browned in vegetable oil with cubed potatoes and onions. Fried altogether at the same time. Salt and pepper as needed. When the potatoes are done, everything is done. The two over easy fried eggs on top are a must, as is a splop of La Victoria Salsa Brava or Hot Pace Picante. I'll second the fresh biscuits and butter, but hot corn tortillas or fresh French bread and butter works well. :D

A nice front blew through here a couple days ago, so I had the windows open overnight. Smelled so mountain fresh this morning, I cooked up that Rocky Mountain breakfast. Sky is the shade I want to paint my Jeep. Good day.

Had to post this mornings breakfast . When we are camping, I just scramble the eggs right in. My boys call it dog yack breakfast. We, the males love it. For those of you that buy the canned stuff, what is your favorite brand?
I love it, but the canned stuff is a bit pricey now a days for me. I prefer the real thing cooked at home( I use pressure cooker most of the time) anyway, but when I get a hankering for it, I will take the canned vs. none at all.

Here in Texas, I like the Mary Kitchen brand. It also comes in smaller, one serving, pop-top cans.

Man it's been ages since I've had CBH.... First had it as a kiddo at a local dinner/popular breakfast spot. I remember asking dad what it was and ordering a small side of it with my biscuits & gravy. Delicious! Savory, salty, crispy goodness! Needless to say, I pawned off most of my biscuits to dad and he let me order a plate of CBH!
Its been way too long since I've had some since its not to common on menu's anymore. I snagged a can of Mary Kitchen brand yesterday along with sausages, eggs, Texas toast, pancake mix and some OJ! Sounds like a dinner plan to me! I LOVE breakfast food and can't wait to taste the corned beef hash!

An easier one-pot meal consists of spiced up Ramen Roast Chicken noodles, with Sweet Sue chicken breast, which comes in 3 ounce and 7 ounce packets. No cooling required, only water and spices to add. To the spice packet that comes with the Ramen, I add salt, pepper, Lawry's seasoned salt, celery salt, minced onion and a squirt of YellowBird habanero sauce. A handful of chopped veggies would add some class.

I don't care for the Hormel canned corn beef but the Argentine stuff is pretty good .
I can't say about the canned hash either I think we only 1-2 brands out here and none locally .
We tear up the corned beef and cabbage , new potatoes and carrots for St Paddi's , I did 15# of meat . We had dinner 2x , 5 sandwiches and the corned beef and potatoes for breakfast with eggs 1 morning . I will say that rogue carrot was different with eggs .

That sounds marvelous! I may try your mom's recipe, it sounds good! I find my tastes have changed somewhat since I left home...My mom tried, but was never much of a cook, and I was surprised how much better everything tasted when I entered the military. :o
One night, while out to dinner, they featured Corned Beef on the menu. I ordered some, because it was like 50 years since I had any. It didn't taste as good as I remembered...but, it was the same with SPAM, and I was raised on the stuff.
I only like the canned stuff, The hash I get from a deli tastes funny to me
