Saw a lot of mention of the Nylon 66 (glad I never got rid of mine) but no mention of the Rem 513 & 514 models. I am sure there have been a lot of rabbit and squirrel take with those 2 rifles by a lot of members here in the over 55 bunch.

Winchester Model 61
Another vote for the Garand
Would also like to see Miroku do a run of the Model '76 Winchester in a real super high quality fit/finish with the original spec. 2X Dlx. walnut pistol grip checkered stock in the piano finish. Half octagon barrel, color cased receiver, set trigger, windage and tang tights, butt trap. The whole shootin' match.
An original '76 Winchester in that configuration and in say 80% condition would probably cost about the same as a new car; a pretty nice car.

The current ones are very nice http://highstandard.com/ They are not made in high volumes but they are available.
Just a couple others calling for the 1895 Winchester sans stupid and hazardous rebound hammer and tang safety. .30-40, .30-06, .35 Wheelan and .405 Win for caliber offerings, of course one could also add .25-06, .280 Rem and .270 Win for the less robust shooters.
Would also like to see 99 Savage with early lower tang safety in .250, .30-30, .300, and lengthened to take .308 and .358, with rotary mag, cartridge counter and choice of octagon or round barrel.
Don't want much bus since I am wishing, wish for the best.
Several guns suggested here for rebirth I already have and enjoy. But I have been looking for Rem in M-8 and M-14 preferably in .35 Rem. Oldest son loves anything in a pump.
Was over at my favorite LGS this morning and my friend the owner was showing me a Savage 99 he had traded for in .30 WCF. It was smooth mouthed (way we describe a very old cow), but beautiful. No bluing left, clean dark bore and you can tell it had been carried for many years in loving hands. It is beautiful--could wind up over at my house. We were discussing this very topic of how much it would have to sell for if we could buy a new Savage 99 today.
Part of my fun is in trying to find these old favorites on my wish and like lists, but I probably would buy and shoot several of these classics if reintroduced.
Ex BIL once asked me just how many guns does a man need and my reply was "Just one more."

Winchester 62A (my first gun in the late 40's)...Winchester 97 12 ga. (Fed my wife and I during College years)...1917 Enfield (I have a Sears model of it with a Ted Williams scope)--the one I had in the 50's and 60's (yes, sporterized) also helped put a lot of food on the table over the years. I never had a 66 but always wanted one...now that I can afford one I can't find a nice one. Saw mention of the 21 Winchester double...I had the "cheap younger brother" which was a model 24...absolutely shot it so loose it was a real hazard...lots of pheasants gave up to it.

A Winchester built right here in the US, 1886,1892.
Rock Island Armory does build a 1911 in 38 Super and I own one so the next item on my list to be rebuilt is a Destroyer Carbine in either 38 Super so there is an easy one-two punch for the camp.
