I've made quite a few "lollipops" but never tried the bacon idea. Off to check the freezer :smile:

I'll be trying that dish tonight, looks yummy! Saturday I took a dozen very large jalapenos, cut tops off and twirled a pearing knife inside dumping all the seeds out, then stuffed with cream cheese and wrapped in thick cut bacon, my mouth is watering just thinking about it.
You had me at "bacon".
My BIL won many hearts and minds years ago by splitting open dove breasts, inserting a slice of jalapeno, wrapping it all with bacon and running wooden skewers through the whole thing. Then he soaked the pile in the fridge overnight in teriyaki sauce and grilled the lot the next day. Now I feel stupid for never thinking of chicken as a dove substitute, since the doves are seasonal and require some wing shooting abilities.
That looks nice! Did you french the leg, get it in a ball and then wrap it?
take a jalapeno pepper slice in half clean out the seeds put a piece of skinless chicken on it wrap with bacon put on grill

I made these today. Amazing how tender a leg is when given a little attention. Cooked over coals at about 250* for 2 hours. Added some aspargus casserole, cantaloupe and baked potato.Attachment 266312

Smoked them on a pellet grill 225 to 135 degrees temp. Then 375 sauced them went to 185 to crisp bacon

Ironic since my girlfriend came home yesterday with chicken tenders, bacon, and skewers for me to grille.
I went out to preheat the grille and when I removed the cover, could smell propane. Uh oh. Tank was empty. I had forgotten to shut the valve on the tank and a brand new tank was emptied. Went to town and got a new tank and will be grilling bacon-wrapped chicken tonight. Have some avocados that need used, so will try to work those into the recipe somehow.
Made them indoors last night. Cut my thumb frenching them! Marinated in wine, oil, Rosemary, and salt and pepper. Wrapped in thick cut bacon - browned in cast iron, then in a 350 oven for 20 min and 400 for the last 10 min. LOML liked them - we had an artichoke and a little rice to go with. Steamed the artichoke for an hour, of course. She said I should smoke them next.
