    Bisquick is my preference, I do half batch which gives me 2-3 nice big cakes. Teflon griddle if only doing a couple, tis just faster, easier, lighter. Doing a batch the cast will come out. Best of all is my 16' cast griddle with 1" sides....

    If the checks are crimped in place well they should stay on. Especially if you freeze the pan and push them out from the bottom. But, pan lubing IMO is messy. Much easier to use 45/45/10 or BLL do one light coat, apply checks, size, apply another...
