1 1/2 lbs. Venison
1/3 Tsp. Garlic Powder
1 Tsp. MSG
1/4 Cup Worcestershire Sauce
2 Tbs. Liquid Smoke
1/2 Tsp.Seasoned Salt
1 Tsp. Onion Powder
1/3 Tsp. Black Pepper
1/4 Cup Soy Sauce
Trim fat from meat, freeze slightly. Cut 1/2 inch thick or a little more. Place in bowl with marinade made of all ingredients. Soak 10 hrs. Place over rack in oven @ 125 for 10-12 hrs., until leathery, not crisp. I have sliced it 1/4 inch thick and turned oven to 180 so I wouldn't have to wait so long to begin eating.

Sounds good! I'll have to give that one a try this fall. I ate a ton of store bought jerky while fishing last weekend and I couldn't help but think that I wished I'd made some venison jerky instead of paying $10 for a big bag.:-D
