This one is great. You really need an electric oven with a broiler to do it right, but I'm sure the members of this board are inventive enough to cope.

Dice up 8 or 10 slices of bacon and put them in a big iron skillet on low until they are about halfway done, and there is plenty of grease. Add a large onion, diced, and a big handful of diced green chiles. Raise heat to medium. From this point on, you need to stir often to prevent sticking. When onion is translucent, add a can of drained beans (pinto, lima, or whatever) and a can of drained corn. A bit of sliced smoked sausage is good, too. Raise heat to medium high and keep cooking until all the liquid is gone. Shut off the burner and put the whole skilletfull under the broiler until everything is well browned. Stir and brown a couple more times, and it's ready.
