You'll need ripe red peppers. an assortment is good- red ripe peppers such as
jalepeno, serrano, cayanne or cow horn.
Remove stem, cut length wise.
place in glass bowl add liguid smoke, brown sugar and white vinigar to almost cover peppers.
Marinade 24 hrs in zip lock bag removing air, turning once.
Place in dehydrader.
When dried place in blender on high until ground into a powder.
I use this for making jerky and or other meats (breakfast sausage)
chilly, etc.

my peper is red but it is not dried

You don't need to go through that much trouble. We just threaded a needle with cotton thread and strung ripe peppers on it and hung them in the pantry to dry.

Dad would take some of the peppers dried like this and toss them in the food processor to make ground red peppers that would knock your socks off.

We also put a bunch of ripe peppers up by putting them whole in glass bottles and covering them in hot (from boiling) vinegar. After a week or two, the vinegar is as much a condiment as the peppers themselves.

Guys,

This sounds great. I put up a bunch of jalapeno and wax peppers this year, and yesterday I made two large batches of jalapeno jam. One mild and one medium. Kinda burned out of canning but the kitchen sure smelled good. Now the wife is baking home made bread to go with them. Wish I could share that smell with you-all'.

Was even in the basement sizing some bullets I cast out of one of Miha's molds and she brought me some slices of bread right out of the oven with some Green Tomato Raspberry Jam we canned yesterday. Now that's a good and wonderful wife.

Now if I could only find something new to do with a bunch of tomatoes.

Gazpacho

6 ripe tomatoes, peeled and chopped
1 purple onion, finely chopped
1 cucumber, peeled, seeded, chopped
1 sweet red bell pepper (or green) seeded and chopped
2 stalks celery, chopped
1-2 Tbsp chopped fresh parsley
2 Tbsp chopped fresh chives
1 clove garlic, minced
1/4 cup red wine vinegar
1/4 cup olive oil
2 Tbsp freshly squeezed lemon juice
2 teaspoons sugar
Salt and fresh ground pepper to taste
6 or more drops of Tabasco sauce to taste
1 teaspoon Worcestershire sauce (omit for vegetarian option)
4 cups tomato juice
Method

Combine all ingredients. Blend slightly, to desired consistency. Place in non-metal, non-reactive storage container, cover tightly and refrigerate overnight, allowing flavors to blend.

Serves 8.

YUM! Fixed this last night and eat it today. This is one good dish.
