How long can sized and lubed bullets set before using or maybe I should ask will the lube go bad after a long peroid of time of setting around?

That depends on the lube and the storage conditions. Cool and dry is always your best bet. Synthetic or synthetic-based lubes can last quite a while. I've had some natural lubes (bees wax, crisco, animal fats) go rancid but they held up for almost a year after being mixed and stored at room temp. I sorta forgot about a batch I'd made. It looked ok but smelled pretty funky when I warmed it up.

some oils like olive oil will break down bees wax over time it wont ruin it for a long time but it will become softer with age.
another vote for the harder [plasticized] lubes.
