Have any of yall ever had pork Sausage bladder? My wife says its gross but I love it. Is it a local thing? I sure hope i'm not the only one who enjoys great food.

Sorta sends a shiver up my spine, does it taste anything like tripe? If so, I'm outa here, thats about the only food I won't eat.

Instead of stuffing pork sausage into pig intistines so its in a link form, you fill the bladder with the sausage and then smoke it. It looks like a big softball. After its smoked you can slice it and fry it.

We never used the bladder but the stomach was used to hold head sausage. They were inverted, cleaned, bleached and turned right side out. The stomach is then filled with the seasoned sausage meat, the ends tied and the stomach returned to the cast iron pot for further cooking.

Most animal bladders are extremely thin.
