Collard greens, ham slice, small potatoes and cornbread.....pot liquor and pepper vinegar!
I'd bet we were the only folks in Huntingdon County, PA that had such a meal.

Beef stew made with potato, carrot, and onion from my garden, and some homemade baking powder biscuits. Have 2 biscuits leftover for later with honey for my daily sweet!

Rib eye steaks, sweet potato baked(with butter and sour cream) and salad. Dessert is salted caramel Heath bar cake topped with salted caramel ice cream. Yummmmm!

Crock pot full of spare ribs, honeydew melon, baked potatoes and salad. Apple pie is getting made now.

A toasted Englis muffin with low fat peanut butter . . . and the cardiologist wouldn't be happy about the "bread" . . . . what can I say? You all "live dangerously" . . . and I'm sure smile and say "yum" while your'er doing it! LOL Sounds like you all had some delicious meals! Man I miss my mother's pot roast and my aunt's home made fried chicken!

SWMBO is working on her 68th day in Fire Camps this summer, 8th day on the current one. I had a Hungry Man Chicken Fried Chicken & a snack container of Cherry Mixed Fruit, sure glad she is coming home tomorrow Hungry Man's are getting old ..... [smilie=s:

Sunday.
Got back from the range, volunteered to help customers sight-in rifles;GMSC, Erie, Colorado.
Wife had made flour "gorditas" with green chile chicharron and beans. There will be gorditas in heaven; I just know!

Roast cajun turkey breast, smashed taters and gravy, fried okra (picked from garden an hour earlier). Left over turkey is for turkey (and bacon) club sandwiches Thursday evening - and probably some more fried okra.

Went out to dinner after going to the movie (The Magnificent Seven).

Ribeye with baked potato and a salad, son had the same with fries, wife had some kind of specialty burger. Wife and son had some fairly hot wings for appetizers.
I ate one...more than enough.

Freshly-caught Chinook filet, asparagus tips with real hollandaise (made by me), fruit salad with nutmeg and store-bough strawberry cheesecake (the only disappointing part of an otherwise fantastically Northwest meal).

Salads can be good when you pile up the grilled chicken or other meats . Nuts fruits you name it! Had two heart attacks in 2 yrs iam with you at times

Rib roast with roasted potatoes, Yorkshire puddings, gravy, with an array of horseradish sauce, hot mustard, and fresh ground horseradish. A nice salad on the side.

A good roast is surprisingly easy in the oven as are the puddings.

I understand all too well, JC. And you're right. Last night, I had some brown rice with sausage and immitation crab meat (it's what was in the fridge) with onions and the usual creole type seasonings, and some soy sauce and a little Wostershire, and darned if it wasn't pretty good! Kind'a a cross between oriental and Creaole cookin', after a fashion. Not as good as some of you ate, but like JC, I have to watch what I allow myself to eat. It helps a little to imagine I'm eating like some of you, though, so ... thanks! It's amazing what the imagination can do! Especially when it HAS to!

While I'm not a southerner, there's something about collards stewed with a hock or two! Add a pot of lima beans and some corn bread and it's culinary nirvana!
