I bought the 9", after all I'm a guy and bigger is always better right? Not! I did find a solution though. I am using one of those magnetic bases for a dial indicator with just one of the bars and one of the clamps. This allows me to set my stem anywhere in the pot I want and at any depth. I set mine about 1/2 deep in the molten stuff in the center away from the element. The block is heavy enough that you don't even need metal to make it work, mine is on a wooden bench. Works great.

If its a bottom pour pot, try putting the probe down close to the spout. That way you'll get the temp. of the metal as it comes out of the pot.
