Does anyone have a good recipe for hot/smoked sausage? Feel like making some this weekend.

I like Chorizo made from elk or venison mixed 50/50 with pork. I use the Rytek Kutas book's recipe:

For 10 lbs. sausage

5 tbs salt
1 cup white vinegar
5 tbs paprika
3 tbs chile powder or hot ground red chile pepper
8 large cloves of garlic
1 tbs Mexican oregano (can substitute regular oregano)
2 tsp coarse black pepper
1 cup water

Grind game and pork through a 1/4" grinding plate and place in mixing bowl or tub. Add all of the ingredients and mix well until spices are evenly distributed. If you want to stuff it into casings, I use hog 38-42 mm, you can use similar sized collagen casings (use the thicker ones for smoked sausage if available). Generally, I just put it in quart freezer bags (about a pound to a bag) as bulk sausage since I use it to make breakfast burritos or to add to black beans. Good stuff.
