View Full Version : Yummy sausage stuffed squash

This recipe serves 2.

One average softball-sized acorn squash -- cut it in half and clean out the innards.

Brown 1/2 a lb of breakfast sausage (either pork or venison), and set it aside.

Saute half an onion (finely diced) and a small can of sliced mushroom with 1 tbsp butter, 2 tbsp Worchestershire sauce and 1 tbsp red wine vinegar.

Grate some cheddar cheese and line the cavities of the squash with a little cheese.

Mix the sauted onions/mushrooms with the sausage and fill the cavities in the squash. Cover this mixture with more grated cheddar. Bake at 375F for 50 minutes. Pull them out and cover them with grated Romano cheese and bake for 15 minutes more.

Serve with salad and bread. Merlot goes very nicely with this meal.

Dang, Glen, that looks GOOD!

I think I have a little venison sausage left, and the local vegetable stand has some real good looking acorn squash. YEAH, good stuff coming up!!:-D
